We would like to Thank Desiree and her staff. They
were wonderful and I can't tell you have much I appreciated their

Here is just a sample of some of the questions asked:
Q: If I have an hors d'ouvres reception, should the food be passed (butlered) or layed out on a buffet table?
A: If your guests are going to be spread through more than one room, it's better to pass some of the hors d'ouvres. Shrimp, for example, should generally be passed to avoid the display from being surrounded by a few consuming guests. A combination of both works well with a large group of people, by bringing the food to guests who may be gathered in conversation, while others prefer to browse around the buffet table.
